Fenugreek is very spicy, aromatic and slightly bitter in taste. It can therefore be used excellently in the kitchen. The taste is reminiscent of lovage. It is often part of seasoning mixtures.
It can be used well as a bread or soup seasoning as well as to season salads.
The whole seeds season roast lamb, beef and pork and are also used to sprinkle bread or small pastries.

💡 Tip

Recipe: Grain bread with fenugreek seeds:
½ cube of yeast
320ml water
300g wheat flour
100g rye flour
50g oat flakes
50g wheat bran
1 tbsp sunflower seeds
1 tbsp sesame
1 tbsp linseed
2 heaped teaspoons of fenugreek
1 tsp sea salt
1 tsp honey

Dissolve yeast in warm water, add half of the flour, knead well.
Let it stand in a warm place for 1 hour, then mix the remaining flour with the other ingredients and knead it into the yeast dough. Let everything rise again for about an hour, shape it into a loaf and place it on a baking tray lined with baking paper.
Let it rise a little again and then bake in a preheated oven at around 200°C for about an hour.
Brush with cold water 10 minutes before the end of the baking time.
