... in french Millésimes are delicacies made using traditional methods. There are only a few companies such as LaGondola making this kind of sardine.
Millésimes sardines are exclusively freshly caught, individually selected Atlantic sardines of the Porto region, which are carefully handpicked and processed. Stored in high quality olive oil, these sardines are allowed to ripen. The oil penetrates deeper into the meat of the fish over the years, it soaks in the sardines, which make them calmer without becoming soft or even mushy. The aroma becomes more complex and dense, even chiseled and finer. The cans are turned at regular intervals to achieve optimal, even ripening.
Among specialists, sardine lovers, collectors, the sardines are really good only from 3 years of maturity.
PS: The first vintage sardine club was founded in 1935 in London - by Vyvyan Holland, the son of Oscar Wilde, whose members meet regularly for tastings and profound talks about the sardine.
The year of production and the number of the solder are printed on the tin.

The company La Gondola, founded in 1940, is one of the oldest fish canning factories in Portugal. True to tradition, only selected freshly caught fish of the season, fresh daily, processed by hand. The combination of fresh quality fish, excellent oils and spices and a controlled processing with low temperatures and a controlled pressure when closing the cans allow the fish to continue to mature in the can, and to combine well with the oil and spices. Due to the high standard of processing, La Gondola has been able to establish a very good reputation in gastronomy, among gourmets and fish lovers, in many countries. The motto of La Gondola "looking for the best" is confirmed by the excellent quality of the products. Nothing embodies the Portuguese cuisine better than wonderful FISH specialties. The taste does not have much in common with the simple sardines.
