Dough: 100 g pine nuts, 250 g flour, 50 g sugar,2 packets vanilla sugar, 150 g butter or margerine, 1 egg yolk, flour to roll out;Meringue: 75 g icing sugar; 1 egg white,120 g pine nuts, 1 tbsp icing sugar to sprinkle on top
For the dough: Roast the pine nuts in a pan without fat until golden brown, let cool and grind finely in an almond mill or in a lightning chopper. Knead all the ingredients for the dough first with the dough hooks of the hand mixer, then with your hands to a smooth dough and cover and leave to cool for about an hour. Roll out the dough to a thickness of just 3 mm on a little flour and cut out with moulds. Place the biscuits on a baking tray lined with baking paper.
For the meringue: Sieve through the icing sugar. Beat the egg whites until stiff. Slowly add the icing sugar. Spread the meringue on the biscuits and sprinkle with pine nuts. Bake in the preheated oven at 175 degrees, fan oven 150 degrees, gas stage 2 for about 15 to 20 minutes. Allow to cool and dust thinly with icing sugar.
