Pimento is often used to season stewed vegetables, soups, dark sauces or to pickle vegetables.
It is known for marinades with fish, grilled meat and is often used for game dishes, lamb and sauerbraten.

Recipe for Chickenwings "Jamaica-Style":
18 chicken wings
Marinade:
1 tsp salt
1 bunch shallots
2 TL ground pimento
1 tablespoon chopped onion
1 teaspoon Piri Piri Sauce
1/2 tsp thyme
1 pinch nutmeg
1 tsp Tellicherry pepper
1 tsp ground cinnamon blossoms
2 teaspoons dried garlic
1 cup olive oil

Mix all spices with the oil and mix with a blender to a creamy consistency.
Place the chicken wings in a flat dish, sprinkle with the marinade, cover and leave to stand overnight in the refrigerator.
Preheat oven.
Place the chicken wings on the oiled grid.
Place a tin covered with aluminium foil (for fat and sauce) on the bottom of the oven.
Bake for approx. 30 minutes at 250°C.
Tip: Instead of chicken wings you can also use chicken lower legs.
