In particular, in North Africa and the Near East, where there are many varieties of green mint, it has an important importance in the kitchen. Mostly it is used to prepare teas or added to tea blends, for seasoning sauces and salads, as well as garnish.
The spearmint (green or spearmint) tastes slightly sweet and is slightly milder overall, while the peppermint has a particularly strong menthol taste. It mainly contains carvone (as opposed to peppermint oil with the main ingredient menthol) in the essential oil.
