Produced by small farmers in Ecuador, selected ripe cocoa beans, harvested by hand.
The raw beans are fermented (not roasted) to reduce their initial bitterness. After cleaning the dried beans, they are peeled and their seeds extracted. The seeds are coarsely ground and pressed, the fat (cocoa butter) is separated and from the resulting dry paste the pure cocoa powder is finely ground. Cocoa powder contains less fat and more fibre than the beans.

Originating from the tropical climate zones in South America, Peru, it is still today the sacred tree Theobroma among the Mayas and Aztecs. The cocoa bean is considered a fine "super food". It contains a variety of antioxidants and other nutrients. Cocoa beans contain more antioxidants than red wine and 3 times more than green tea, cocoa beans embody a rich source of minerals.
