The locust bean gum is obtained from the seeds of the pods by grinding. This is used to thicken sauces. A syrup can also be made by pressing the fruit. Carob contains many dietary fibres and antioxidants, tannins, pectin and lignin.

Under number E 410 (stabiliser) it is fully authorised in the EU as a food additive (also for organic products). It is a filler, gelling agent, thickener and stabilizer.
Locust bean gum contains about 5 percent protein and only indigestible polysaccharides (dietary fibres). Locust bean gum (also known as carrot or carrot flour) can bind to water between 50 and 100 times its own weight. (1 gram of it binds cold about 50ml and heats up to 100ml liquid.) It is used in the production of sweets, baked goods, sauces, soups, puddings and ice cream. It is a good binding agent for emulsions and a stabilizer, e.g. in fruit preserves or jams. For dietary purposes, locust bean gum is used as a baking aid in gluten-free bread. It has virtually no calories.

It is neutral in taste, dissolves completely in warm water, and gels when cold.
For 1 kg of flour approx. 3 kg of seeds or 300 kg of legumes are required.
