The locust bean gum is obtained from the seeds of the pods by grinding. This is used to thicken sauces. A syrup can also be made by pressing the fruit.

It is used in the production of sweets, baked goods, sauces, soups, puddings and ice cream. It is a good binding agent for emulsions and a stabilizer, e.g. in fruit preserves or jams. For dietary purposes, locust bean gum is used as a baking aid in gluten-free bread. It has virtually no calories.
It is neutral in taste, dissolves completely in warm water, and gels when cold.
For 1 kg of flour approx. 3 kg of seeds or 300 kg of legumes are required.
Recipe for Portuguese vegetable pan
1 half eggplant
1 green pepper
some broccoli florets
1 tablespoon Mediterranean seasoning mixture (Art.No. 6604)
1 pinch of dried garlic (art.no. 6608)
2 teaspoons locust bean gum
Sea salt (Art.No. 618)
Black pepper (Art.No.6634)
1 teaspoon tomato powder (Art.No.6626)
50 ml Ketchup
100 ml milk
50 g grated cheese
Cut the vegetables into bite-sized pieces and cook in little water with all spices and ketchup.
For the sauce, mix the milk, the cooking water of the vegetables, the cheese and the carob bean gum and bring to the boil. Mix with the vegetables and you have already conjured up a really tasty and healthy lunch.
