It originates from the Mediterranean region and is one of the oldest medicinal and spice plants.

Aroma: Reminiscent of anise, dill and cumin, refreshing, light eucalyptus note, spicy.
Use: For refining fatty meat and poultry as well as lamb and pork, for marinades, sauces, dressings (salad vinaigrette), mayonnaise, dips, for flavouring sea fish, seafood and crustaceans, vegetables, potatoes, for seasoning Indian and Oriental dishes.
Dosage: Sensitive, as very taste-intensive (unit of measurement: knife tip). Whole fennel seeds develop their aroma best if they are lightly crushed shortly before use (e.g. in a mortar).
