The bigeye tuna is one of the tastiest types of tuna. Adult bigeye tunas are caught with longlines in the Atlantic Ocean. In order to avoid overfishing, the catch is strongly regulated by the EU.
Ventresca is the belly meat of tuna and by far the most valuable, tender and tasty part. Only about 1% of the fish can be processed into this exquisite tuna fillet. It is a little lighter in colour and much richer in fat and therefore softer.
Prepared with a small salad of red onions, ripe tomatoes and a dash of balsamic vinegar, it makes a quick, very tasty dish, which is also found in the star cuisine. The 120g can has a fish weight of 90g.
