This sauce is a secret recipe passed down from generation to generation and is made with fresh garlic, fresh cilantro, olive oil and lemon juice. The trade in tuna is also controversial here. We have nevertheless decided to support the efforts of Azores fishermen to traditionally catch and process tuna by hand.
