Only the best fillet pieces of Azores tuna are placed individually by hand in the jars. The tuna is aged in the best olive oil for at least a year. The fillet pieces are juicy and are among the finest.

The trade in tuna is also controversial here. We have nevertheless decided to support the efforts of Azores fishermen to traditionally catch and process tuna by hand.
