As in the times of the Aztecs, harvesting is still done by hand today. The fruits, which grow close to the trunk or branch forks, vary in size and ripeness and are carefully separated with razor-sharp blades on long wooden poles. To remove the pulp and the cocoa beans from the pods, the hard shells of the cocoa fruits are whipped with machetes.
The raw beans of the highest quality are then selected and fermented to reduce the initial bitterness.
In the process, which lasts up to 8 days, aromas and preliminary stages of taste are created, from which the actual cocoa aroma develops during the subsequent drying and roasting process.
After cleaning the dried beans in natural water, they are peeled and their core extracted to be broken open. These are ground into cocoa paste. The fat is extracted from the paste.
The remaining solid part is dried again and then finely ground to cocoa powder.
This cocoa powder then contains less fat (11%) and more fibre than the beans. The production process preserves a significant proportion of the nutritional value of the beans.

The BIO cocoa powder special mixture of the varieties 60% Criollo, 40% Trinitario and Forastero is particularly suitable for cooking and baking.
Criollo is the finest of the fine cocoas and ensures a mild, pronounced cocoa taste. Its aromas are reminiscent of caramel, wild berries, tobacco and nuts.
Trinitario is a particularly robust cross between Criollo and Forastero, which provides an aromatic, strong taste with a light acidity.
Forastero is one of the original varieties with a slightly aromatic strong cocoa taste.
