The nonpareil is lighter in the almond skin and can be blanched or chopped very well if desired. The cores are grown evenly and relatively flat, natural, untreated without additives. This variety has a very low bitter almond content.

Almond trees occasionally carry bitter almonds, which are hardly distinguishable externally from sweet almonds. This natural proportion is about two percent and is completely harmless to health. The commercially available bitter almonds, however, are a subspecies with the Latin name Prunus amygdalus amara.
