The nutritious dried fruit has a high content of vitamins C and D, vitamins from the B group and is rich in calcium, zinc, copper, iron, magnesium, phosphorus and fibre. The potassium content in dates is 50% higher than in bananas.

The dates remain on the plant beyond the actual ripening period, because when dried they are much easier to store and transport. To prevent the ripe fruits from being eaten by insects, the fruits are protected with a net. The net also catches the ripe fruits, which would fall off.
Dates in the kitchen:
Cut the dates lengthwise, remove the stone and fill the place of the stone as you like with: candied ginger cubes, marzipan, walnuts, hazelnuts, almonds...
or with cheese: Raifort-Cantadou, blue cheese, sheep cheese.....
Recipe: date salad:
Peel and filet 3 oranges, cut into round, fine slices,
Cut 6 dates open and stone them, cut them into rings. Cut 1 small red shallot finely and add some pepper, 2 tablespoons white balsamic vinegar, 2 tablespoons olive oil.
Mix everything well, divide into portions and serve cool.
Warm orange saddle compote:
The juice of an orange, 50g raw sugar, 2 tablespoons honey, 1 pinch cardamom, 2 untreated oranges with peel in approx. 1 cm large cubes cut, 8 Medjool dates lengthwise in strips cut.
Bring orange juice to the boil with raw sugar, honey and cardamom seeds, simmer for approx. 5 minutes over low heat, add the orange cubes and dates and simmer again for 2 minutes, allow to cool slightly and serve lightly warm.
